Aunt Thelma’s Pecan Pie
9 inch unbaked pie shell
Heat oven to 375
3 eggs
2/3 cup sugar (regular or brown)
½ tsp. salt
1 tsp. vanilla
1/3 cup butter, melted
1 cup light corn syrup (can use dark)
1 cup pecan halves or pieces (Thelma uses a little more)
Mix all ingredients in a medium sauce pan.
Melt butter slightly.
Add corn syrup, sugar, eggs, salt, and vanilla.
Beat until well mixed.
Add pecans and pour into pie shell.
Bake 40 to 50 minutes. It is done when the center is firm when wiggled.
If your oven bakes hot reduce to 350. This helps keep the crust from burning.
